Ras el hanout translates to top shelf. It is a Moroccan spice mix and used widely through the cuisine.


1 tsp cumin seeds
1 tsp coriander seeds
6 cardamon pods seeds only
1/2 tsp fennel seeds
1/2 tsp black pepper corns
2 tsp sweet paprika
1 tsp cinnamon powder
1 tsp turmeric powder
1 tsp cayenne powder
1 tsp salt
1/2 tsp sugar
1/2 tsp all spice

Place all ingredients in pestle and mortar and grind to a fine powder. Store in an airtight container for up to 3 months.
