FIG GLUT - FIG AND CHOCOLATE JAM

Figs are one of my favorite fruits YUM! But sometimes when they ripen all at once you cannot possibly eat them all! I adapted a recipe to make this beautiful fig, shiraz and chocolate jam. The shiraz gives it a beautiful depth and the orange peel and chocolate go beautifully with the figs! Give it a go next time you have too many figs in your harvest.


1 kg fresh figs chopped
750g raw organic sugar
zest and juice of 2 oranges zest julienne
zest and juice of 2 lemons zest julienne
1 vanilla pod split and beans scraped
100g 70% cocoa chocolate

add figs, sugar, orange juice and zest, lemon juice and zest and vanilla pod in pan and cook until jammy. To test place a plate in freezer at start of jam making process and place a tsp of jam on plate, the it doesn't run of the plate it's ready. Take of heat and stir in chocolate. Spoon into sterilizer jars.
