NO SHOW AND A TALLY CATCH UP

Sorry I have been a no show on here! The last few weeks of pregnancy were an exhausting few, with many chores that needed to be completed before we brought our new little man home. And then when I thought I had at least a week to go, my waters broke 1 week before my due date! I will post our birth story in the coming weeks.

WEEKLY HARVEST 35 & FOOD SWAP

Spring has definitely sprung! The garden has become lovely and productive. I have been able to go out everyday and pick something to include in that night's dinner. I am looking forward to summer so that we can have more variety and more volume of produce! This week I also went down to my local food swap so I could swap some of my excess greens for things that I haven't grown.

To the food swap I took, parsely, sage, thyme, chili, and
yellow silverbeet.
In return I took home this lovely aloe vera plant.

Some oranges.
A large bunch of lemon myrtle. This is an Australian native - bush tucker food. I searched high and low for some earlier this year and it was only when we were in byron bay on holiday that I found some at a little organic shop. So I am thrilled to have some in it's natural state and not pre ground. The great thing about lemon myrtle is that it has anti microbial benefits. Much like tea trea except this is edible and not just topical. 
While we were in the garden we went on a snail hunt and this is half of our bounty. Squiz had a lot of fun helping collect and squash the offenders.

WEEKLY HARVEST 34 & GARDEN SNAPSHOT

The weather is turning and we are starting to see some gloriously sunny warm days and cool but not cold evenings. Oh how this motivates me to get out in the garden!

The cabbages are coming along nicely, and I just spotted a sneaky snail hiding!
The broad beans have come along nicely from last week, they should be ready to pick within the next week!
Looking forward to harvesting my garlic in early November when the leave start to turn yellow.
At the end of the tomato season I had a couple of seedlings spring up, I left them in over winter and this is the sole survivor. I wonder how it will perform this summer?
My tomato seedlings are coming along nicely, hopefully I will pot them up into bigger pots in the next couple of weeks.

WEEKLY TALLY - NUMBER 33 & GARDEN SNAPSHOT

I have been slowly cleaning up the winter garden to make room for my spring seedlings which I will start to sow at the end of this month and early next month. It's been a slow process as it's been getting harder to bend down and stay bending down, so something that would usually only take me a couple of hours, need to be spread over a number of days 15 minutes at a time. I am hoping to keep up with the garden this summer, even with a newborn! And those homegrown veggies are going to be even more important as bubba Will starts his first foods!

I'm starting to get baby broad beans after months of flowering!

The chili somehow continued to fruit throughout winter, even though the chilis are smaller and the leaves sad.

WEEKLY TALLY - NUMBER 32 & GARDEN SNAPSHOT

The garden is going wild! A combination of lack of energy and lack of time is really resulting in a jungle! But with the beautiful weather Melbourne has been receiving over the last few days I have started to tame the wild, and hope to head out there after this post and clean up the rest of the beds!

TURKISH BEEF AND SILVERBEET PIDES

There has been an exhaustion that has wrapped around me, and it's not just caused by pregnancy. Renovating and trying to keep up with a toddler is wearing me down as I have reached my third trimester. The passion and motivation to cook over the last few weeks has dwindled, as too has my energy. Dinners have become boring and mundane as I quickly slap a few things together in desperation to have something ready in time for dinner. Food is sustenance, and without it's quality present I have felt the impact.  So meal planning has come into play so there are no excuses for this dreary mumma come late afternoon. I know what is for dinner and I have all the ingredients on hand. I know a lot of people cook this way, but I have always been a cook on a whim sorta gal. I like to cook to the weather, and to what we feel like for dinner and not be confined to the constraints of a meal plan. But alas times are changing, as my energy is being redirected elsewhere, my thoughts less focused on food, and time being a precious commodity.

I love middle eastern food, it is one of my favourite cuisines, along with south east asian. The spices in middle eastern cooking, the soft braised meats, the meats that are barbequed over a wood fire, beautiful breads and all the fresh accompaniments encased by it's general simpleness YUM! This is my recipe for pides. There are two fillings here, a turkish beef and cheese and a silver beet and feta and this recipe makes 8 of each.

FOR THE BREAD:

500 mls milk
120 grams butter
3 tablespoons sugar
14 grams dried yeast
1350 grams plain flour
1 egg

Combine milk and butter in a small saucepan and bring to blood temperature and allow butter to melt. In 250 mls of warm water stir in sugar and and yeast and allow to activate over 5 or so minutes. You will know when activation occurs when the yeast starts to foam. Combine yeast and milk mixtures and add to flour and knead to combine. Leave in a warm spot for about an hour, until the dough has doubled in size.

BEEF AND CHEESE FILLING

30 mls olive oil
650 grams chuck steak in 1 cm cubes
1 large onion finely diced
4 cloves garlic minced
1 large red capsicum finely diced
1 heaped tablespoon tomato paste
2 tsp paprika
2 tablespoons fresh marjoram
1 dried chili seeds removed and crumbled
400 gram can of diced tomatoes
300 grams tasty cheese grated

Fry beef in oil until well browned, remove from pan. Add onion, garlic and capsicum and saute for 5 minutes until softened. Add tomato paste and paprika and toast for a couple of minutes. Add tomatoes and 100 mls of water, marjoram and chili and return beef to the pan. Simmer for 1 hour until beef is soft and tender and sauce has reduced and thickened. Season well and set aside.

SILVERBEET AND FETA FILLING

1200 grams of silverbeet
2 tbs olive oil
1 onion finely diced
4 garlic cloves minced
60 grams golden raisins (or regular sultanas if you do not have access to these)
200 grams danish feta (you could you the regular type, but I like how this almost melts into the silverbeet)

Trim and wash the silverbeet, leaving the steam in the leaf part and allowing a couple of centimeters of steam on each leaf. Finely shred the silverbeet. In a large pot, saute onions and garlic until soft and add raisins and cook for a couple of minutes. Add silverbeet and cover stirring occasionally, allow to cook for 10 minutes. Fold in the crumbled feta and leave to one side.

ASSEMBLY

Preheat oven to 200 degrees celsius. Divide dough into 16 pieces. With the egg make an egg wash by beating egg with a splash of water. Roll out on a lightly floured surface until approximately 15 x 25 centimeters.

FOR THE BEEF PIDE

Add a handful of grated cheese to the middle and bottom and then on top a couple of tablespoons of the beef filling, leaving a couple of centimeters of dough all around. Pleat the edges around the filling and transfer onto a greased tray. Brush the dough with egg wash and bake for around 20 minutes or until dark golden.

FOR THE SILVERBEET PIDE

Add a couple of tablespoons of silverbeet mixture to the middle of the dough, leaving a couple of centimeters of dough all around. Pleast the edges around the filling and transfer onto a greased tray. Brush the dough with egg wash and bake for around 20 minutes or until dark golden.

Serve immediately and these are perfect by themselves for a tasty lunch or dinner. The leftovers are going in my husbands lunch box Monday morning. They would pair up beautifully with some hummus or tzatziki, and a lovely salad of cucumber and carrot ribbons mixed with mint and coriander leaves and a zingy lemon dressing.

WEEKLY HARVEST - NUMBER 30

It wasn't super productive in the garden this week but I had a great time supplementing our harvest by swapping my excess greens for citrus of all sorts at my local food swap.

ANOTHER ONE BITES THE DUST & A FOOD SWAP.

And so another weekend is here, and my hubby is required to work it, so there will be yet another week of no progress *sigh* I think that makes 3 weekends in a row now! The drainage is still half done, but at least the flooding issue has been resolved. And the house is still upside down, when everything is going to get finished I have no idea, lets hope it is presentable in a couple of months time!

But this is not all bad news, it means I get to go to another food swap. It's been hard for me to get to one lately as I have been so wrapped up in house renovations, I just haven't had the time to spare, a couple of hours is a big deal when you are trying to get stuff ready and renovated around the house and only have one or two days to get it done in. I am looking forward to being able to attend in summer when the weather is glorious and the produce is varied. In winter there just isn't the same amount of variety, but it is still lovely to catch up with fellow gardeners who are passionate about growing their own food.

This is the produce I took to swap:

A couple of bunches of Rubin Lettuce.
A couple of bags full of Lollo Bionda Lettuce.
Three bunches of Lemon Thyme
Four Bunches of Flat Leaf Parsley.
Five bunches of yellow silverbeet.
This is what I brought home:

A lemon
Yellow Limes
Some oranges
Some kumquats
A couple of kiwi fruits.
Some grapefruit.
Some kaffir lime leaves.
A couple propagated grape cutting.
Some seedling trays.
And some large trays to house the smaller trays.
All in all I think I did pretty well swapping my excess produce for things I don't grow or have!

WEEKLY TALLY - NUMBER 26

Life continues to be hectic around here. Time is slipping by way too fast! We only have 17 weeks until bubba Will graces us with his presence. That means 17 weeks to finish half a house worth of renovations. I also want to get all my summer veg in before November. I think by then I will be too big and too tired to get out and garden as I would be 38 weeks pregnant! We still have my son's 3rd birthday and our BaByQ to host in those 17 weeks as well (after my husbands 30th this weekend)! So I am taking advantage of this cooler weather where my veggie patch has slowed down to completed my kilometer long list of chores. This is how my harvest has been this week.

WEEKLY TALLY - 23 & 24

The garden is growing nicely and has welcomed the winter rains over the last couple of days. Life is still hectic renovating our tushies off, and unfortunately the garden has been put on the back burner. Luckily it's not growing great guns like it would if we were in summer so it can go days and days without me popping my head in. This week I will be harvesting my first purple cauliflower of the season, so I am very excited about that!

WEEKLY TALLY - NUMBER 21 & 22

My small winter harvests are seeing these weekly tallies actually being fortnightly. Although things have picked up over the last few weeks with more and more silverbeet and parsley thriving in this cold wet yet sunny weather. I also have quite a few purple cauliflowers that are starting to head and in a few weeks they should be ready to harvest. Looking forward to some more cauliflower puree, which we use instead of mash potato when we have too many cauliflowers. It is lovely and sweet and lower in calories which is  always a bonus.
