HEALTHY ORANGE DRIZZLE CAKE

I love baking, but i often don't because I know i will end up eating them :/ But i had some oranges that needed to be used and i felt like baking. I flicked though some cook books and the lemon drizzle cake caught my eye. i thought about ways to make this healthier so have made some changes!

Ingredients:
200g whole spelt flour
2 tsp baking powder
200g coconut palm sugar ( this has a much lower gi than cane sugar. It doesn't mean you aren't eating the calories it just means you wont get a spike in blood sugar and it is slowly released instead)
4 eggs
150ml Greek/ natural yoghurt
grated rind of 1 orange
80 mls orange juice
150 mls olive oil you could also melt 150g of coconut oil
syrup:
2 tbs raw sugar
100 mls orange juice

Combine the dry ingredients in one bowl and the wet ingredients in another.


And then mix together.



Line a 22cm cake tin and bake at 160C for 45-55 minutes until a secure comes out clean. When there is 15 minutes left for the cake combine syrup ingredients bring to the boil and simmer for 5 minutes


When cake is ready slowly pour over syrup allow to cool and serve with a dollop of Greek or natural yoghurt.
